Ingredients
– 1 lb seal meat, thinly sliced
– 1/3 cup homemade or store-bought teriyaki sauce
– 2 tablespoons olive oil or canola oil
– 1 onion, cut into very small pieces
– 1 carrot, thinly sliced
– 1 celery stalk, thinly sliced
– 1 1/2 cup broccoli (fresh or frozen), cut into small florets
– 2/3 cup water
– Salt and pepper to taste
Variation
– Replace the seal with any other meat, like caribou, beef, chicken, or pork.
– Try adding other vegetables, like peppers or mushrooms. You can also use frozen vegetables.
– Make a vegetarian stir-fry by using tofu or adding more vegetables instead of meat.

Method
1. Put the seal meat in a bowl with 2 tablespoons of teriyaki sauce. Leave it for at least 10 minutes. This is called marinating the meat.
2. In a large frying pan, heat one tablespoon of oil on high. When the pan is hot, add the meat. Stir until it is browned. About 3-5 minutes. Set aside on a plate.
3. In the same pan, add the remaining oil and the vegetables. Cook the vegetables for a few minutes. Stir so they don’t burn. Do this until the vegetables soften a little bit.
4. Add the meat back into the pan with the vegetables. Add the remaining sauce and the water.
5. Simmer for two minutes or until the sauce gets thicker.
6. Season with salt and pepper to taste.
Tip
– You can serve this stir-fry with rice or egg noodles.
– To cook rice, add 1 cup of water to 1 cup of rice in a sauce pan. Bring to a boil, and then reduce the heat to a simmer until all the water has evaporated (usually 10 to 15 minutes).
– To cook egg noodles, boil water and add the egg noodles. Boil for 2 to 4 minutes, or until the egg noodles are soft.

If the berry is red and crunchy, it’s not ready to eat. When they’re ripe and ready to eat, aqpiit are golden yellow, very juicy, tart, and sweet. If they are overripe, they turn creamy. Aqpiit contain a lot of vitamin C and are very good for you.
Ingredients
– 1 cup sour cream (if you don’t have sour cream, you can use 1 cup of milk mixed with 1 tbsp white vinegar)
– 1 1/2 tbsp lemon juice, or half a lemon, juiced
– 1 tsp baking soda
– 4 cups all-purpose flour
– 2 tsp baking powder
– 3/4 cup white sugar
– 1 tsp salt
– 1/4 tsp cream of tartar (if you don’t have cream of tartar, you can use 1/2 tsp white vinegar)
– 1 cup aqpiit
– 1 cup unsalted butter, very cold and cut into small cubes
– 1 egg

Method
1. Preheat the oven to 350°F.
2. Lightly grease a cookie sheet.
3. In a small bowl, mix sour cream, lemon juice, and baking soda. Set aside.
*Note: If you are using milk and vinegar instead of sour cream, combine and let sit for 5 minutes before mixing with the lemon juice and baking soda.
4. In a large bowl, whisk together flour, baking powder, sugar, salt, and cream of tartar. Add aqpiit and stir.
5. Add the butter to the flour mixture. Cut in the butter with a pastry blender or with your hands. If you are using your hands, run them under cold water before mixing in the butter. Then, use only your fingertips. This will keep the butter very cold. It’s okay if some berries get mashed during this step.
6. Stir the egg into the flour mixture. Then, add the sour cream mixture and stir. The dough should look dry and shaggy. Do not overmix.
7. Lightly flour a clean counter. Place the dough on the counter. Knead the dough a couple of times with your hands until it just starts to stick together.
8. Divide the dough in half and form each half into a flat circle that’s about half an inch thick.
9. Cut each circle into six equal pieces. Place the pieces onto your cookie sheet.
10. Bake for 15–18 minutes, turning the cookie sheet after 8 minutes, until the edges are starting to brown. Let the scones cool for 10 minutes and then enjoy with butter or jam.
Marvelous Muskox Chili
There are lots of muskoxen in western Nunavut! Inuit in the Kitikmeot region eat muskox meat frozen, dried, and cooked. Muskox meat is high in protein and important nutrients like iron, vitamin B, and vitamin D. It keeps our muscles, blood, and skin healthy.
Ask an adult at home to help you make this recipe! If you don’t have muskox handy, you can make this chili with caribou or ground beef.

Ingredients
– 2 medium onions
– 3 garlic cloves
– 3 (15.5-ounce) cans of beans. You can use different kinds of beans, like white beans, black beans, or kidney beans.
– 2 tsp vegetable oil
– 1 tbsp red pepper flakes
– 6 tbsp chili powder
– 1 tsp ground cumin
– 1 tsp salt
– 1/4 tsp cayenne pepper
– 1 (14.5-ounce) can diced tomatoes
– 4 cups water
Note: You can pick other types of canned beans if you’d like!
Method
1. Dice the onions so that the pieces are bite-sized cubes. Cut up the garlic into slivers. Set aside.
2. Drain the liquid out of each can of beans. Rinse the beans under running water. Set aside.
3. Chop up the muskox meat into cubes.
4. Heat 1 tsp of the vegetable oil in a big pot over medium-high heat. Wait about 2 minutes, then add the muskox meat.
5. Cook the muskox meat for about 10 minutes. While it is cooking, move it around with a wooden spatula to keep it from burning.
6. Use a spoon to take the muskox meat out of the pot. Put it on a plate.
7. Add the rest of the vegetable oil to the pot. Add the onions, garlic, red pepper flakes, chili powder, cumin, salt, and cayenne pepper. Cook for about 5 minutes, stirring to keep the ingredients from burning.
8. Add the canned tomatoes. Let the mixture cook until you see bubbles forming in the liquid.
9. Add the muskox meat, beans, and water to the pot. Wait until the mixture starts to boil. Then, turn the heat down to medium-low. Cover the pot.
10. Let the chili cook for about 45 minutes. Stir every so often.
Toppings
You can serve the chili as is, or add sour cream or cheese on top. Eat with bannock or bread!
